Our group has successfully prepared all three of the dishes that were chosen from Chile, China, and Italy. The First dish that we prepared was the Chilean stuffed chicken breast. This dish was very easy to prepare considering all that goes into preparing the dish is slicing seasoned chicken breast adding sliced carrots, sweet potatoes, and onions wrap in foil and bake. The dish did however have a few minor set backs such as the sweet potatoes and carrots could be steamed before adding to chicken breast so that they still aren’t crisp and crunchy after baking. Overall this was a very simple, easy and healthy dish to prepare. The next dish that we prepared was Chinese chicken and gravy. This dish tested our chef skills but we conquered it with out any major issues. This preparation for this dish was a little time consuming due to the amount of ingredients it took to prepare the dish. Although this was a minor issue the first time we prepared this dish I believe with time we could perfect the preparation of this dish. Our group has also decided that if this is the dish that we choose to prepare for our final product we may want to serve the chicken and gravy over some white rice. We would also need to double the gravy recipe to obtain enough gravy for a sensory analysis. The last dish we prepared was chicken mozzarella cheese sticks. This dish was very easy for our group to prepare and we also agreed that this dish would be very easy to replicate over and over. We however did receive a suggestion to maybe reduce our portion sizes from whole cheese sticks into bite size portions. Our group also decided that maybe some more spices such as salt, pepper, and basil should be added to the product. We also decided that a marinara dipping sauce would be a good fit.
We haven’t decided as a group on a final product to showcase, but we are going to reproduce these food products with our added improvements to determine a final product to showcase to the consumer. Our audience has not changed, because the Chilean stuffed chicken breast was the healthiest choice targeting healthy eaters. The chicken and gravy would make a great dish to prepare for a family due to its convenience and quantity. If we could prepare it at our facility and package it so that the consumer would only have to re-heat the chicken and gravy on stove top to prepare it home. The chicken mozzarella cheese sticks would make for a convenient snack at home or any social event and they would also be a great fit for the fast food services due to quick cooking time. Cutting the chicken cheese sticks into chicken cheese bites would only make the product more convenient. This product could be prepared and breaded at our facility and frozen. The consumer would then only have to fry the chicken cheese sticks/ bites at home for a few minutes. All in all our group has three great products that have results that are easy to reproduce, could be implemented in the food industry today, and have there own specific target customers.
